We love celebrations at our home. One of our favorite ways to celebrate is with special pancakes! This year we celebrated Chinese New Year by ringing in the Year of the Monkey with monkey pancakes. Last year I made these cute Sheep pancakes in celebration of the Year of the Sheep. I had my act together last year and ordered some tableware from Oriental Trading so I had a festive tablescape to accompany the pancakes.
To make my pancake batter, I used Bisquick Heart Smart and doubled the recipe on the side of the box. This provided enough batter for 5 monkey pancakes. I first made the ear and snout pancakes by making small and medium-sized round pancakes on the griddle. I used my small and medium scoop from Pampered Chef to make the pancakes consistent sizes. Of course, you can also use spoonfuls of batter, but I find using the scoops gives much more consistent and mess-free results.
After completing the snout and ears, I mixed 2 heaping tablespoons of Penzeys Natural Cocoa Powder and 3 Tablespoons of sugar into the remaining batter. I think that using Penzeys cocoa results in a much more moist pancake than other cocoas I have tried. I then used 3 medium scoops of batter to form a large egg-shaped pancake. Using a large spatula will definitely help in flipping this over-sized pancake.
Then arrange the pancakes on your plate. I used Enjoy Life Mini Chips for the eyes and mouth and a Wilton Jumbo Heart Sprinkle for the nose. A strawberry tip, red cinnamon candy, or cherry would also make a cute nose.
